Off to Italy
I’m excited to share that, along with my wife and some of my kids, I’ll be going back to Italy. I can't wait to reacquaint myself with the wonderful Italian cuisine of Rome and re-energize my passion for cooking authentic Roman dishes.
Carbonara, Amatriciana, Cacio e Pepe, and Gricia are the "four pillars" of Roman pasta. They are closely related and share a base of Pecorino Romano cheese and black pepper. They evolve from one another simply by swapping or adding just a few ingredients. See infographic.
